19:00-20:00 Enjoy your Peking Duck Dinner. The duck must be of superior quality to the white Beijing variety, which is bred on farms around Beijing. The ducks are forced to feed 4 times a day to make them grow fast so they can be 3-3.5 kilograms in weight when killed. Using less-smoky hard fuel-fruit tree branches as the firewood, which produces less smoke, the duck can be lent a more fruity flavor. The dish features a whole duck roasted until the skin turns crispy and golden while the meat remains tender and succulent. Eating Peking Roast Duck is not only about the food itself but also the whole dining experience. It is usually served with thin pancakes, scallions, cucumbers, and sweet bean sauce. The chef slices the duck at the table, and the guests can assemble their pancake wraps, adding the desired ingredients and flavors.
